Notes: In the mountains of Cauca, ASMUCAFE brings together women farmers and landowners from the municipality of El Tambo around a shared goal: using coffee to strengthen their families and their community. The association is built on cooperation, with members sharing knowledge, resources, and support while a special premium from each coffee helps fund projects focused on women’s empowerment. Their Castillo and Colombia varieties are carefully harvested and put through a distinctive double fermentation, first resting as whole cherry before being depulped and fermented again in open tanks. After washing, the coffee is slowly dried in the sun or in parabolic dryers. The result is a rich, structured cup with notes of dark chocolate, Kahlua, and dried fruit.
